A Baby Changes Everything

Last Sunday, my church put on a play called "A baby changes everything" (I think).  It was a good production and the Choir did a great job.

They sung this song as well as show the video on the screens.  What a powerful song.


As you think about the title, "A baby changes everything".  I think about in the physical realm.  When a a newborn or baby is around, people get happy.  They become more child-like.  Families unite or come together after years of not talking.  New life is restored in some families that have been dead.

As I go through life sometimes wondering why I am here and what am I suppose to do....Jesus was born and he knew he was going to die for an underserving nation.

I have my moments of shopping too much but I'm so thankful that I know why we celebrate Christmas.  I have a family that understand that it's not about presents but about the gift that was given to us.  Jesus.

Think about how life would be different if he didn't come.

Ornament Exchange

So this weekend, I participated in a cookie and ornament exchange.  I thought since my cookie exchange post was soo long.  I would write a different post regarding the ornament exchange.

I had high hopes of making an ornament to give out but time really wasn't on my side.  It's normally busy for social workers around this time and with it being dark when I get off, I have no motivation to do anything but SLEEP!

So as I went searching for an ornament that would be "that" perfect one.  I found one, well it was a three in one.  It was three different ornaments that said, believe, hope, and peace.  It was silver and glittery.  I really liked it that I bought the set to give one to my mom, dad, and sister in their stockings.

So we picked gifts based on first names.  As I sat and waited for my name to be called, I had my eye on this box.


As I was waiting and watching the other ladies open their gifts, I was praying that no one would pick this box.  It just reminded me of Christmas.  I acted just like a little kid, I helped the process along.  Until it was my turn, they said who's next?  Me!  I shouted so excitedly. 

I opened it up and there were two ornaments.  A snowman with a pie in hand as a symbol of our cookie exchange and a pickle.

Which read: In Old World Germany, the last decoration placed on the Christmas Tree was always a pickle...carefully hidden deep among the branches.  Legend has it that whoever found it on Christmas morning was blessed with a year of good fortune and a special gift.

I love traditions.  It's times like these that I really wish I was married with kids.  This year I've been finding so many fun crafts, activities and traditions to do and start.  But it's no fun by yourself.

Cookie Exchange: No Bake Cake Batter Truffles & Ultimate Chocolate Chip Cookie n' Oreo Fudge Brownie Bar

 Yesterday, I participated in my first ever cookie exchange.  I was so excited.  There was only two rules.  We had to bring 3 dozen of cookies and they must be homemade (No store bought or pre-made dough).

A hunting I went to look for something "easy".  I don't consider myself an expert my any means but I do loke to try new recipes and have other people try them.

Thanks to Pinterest, I found my two recipes.

NO BAKE CAKE BATTER TRUFFLES
  • ½ cup unsalted butter, softened
  • ½ cup white sugar
  • 1 ½ cups flour
  • 1 cup yellow cake mix
  • 1 teaspoon vanilla
  • 1/8 teaspoon salt
  • 3-4 Tablespoons milk
  • 2 Tablespoons sprinkles
Truffle Coating:
  • 16 ounces (8 squares) almond bark (or white candy melts)
  • 4 Tablespoons yellow cake mix
  • sprinkles
Beat together butter and sugar using an electric mixer until combined. Blend in vanilla.

First time I used this mixer my mother gave me.  I had always wanted one a mixer and it came with a bowl and everything.  I was super excited.
 Add cake mix, flour, salt, and vanilla and mix thoroughly. Add 3 Tablespoons of milk or more if needed to make a dough consistency.

Mix in sprinkles by hand. Roll dough into one inch balls and place on a parchment or wax paper lined cookie sheet. Chill balls in the refrigerator for 15 minutes to firm up.

While dough balls are chilling, melt almond bark in the microwave in 30 second intervals until melted. Stir between intervals. Once melted, quickly stir in cake mix until incorporated completely.

Using a fork, dip truffles into almond bark and shake of excess bark by tapping the bottom of the fork on the side of your bowl. Place truffle back on the cookie sheet and top with sprinkles.

 

Repeat with remaining balls until finished. {Note: for smoother looking truffles, don't add cake mix to melted chocolate, just leave it by itself}


Chill cake batter truffles in the refrigerator until serving. Makes around 24-30 truffles.

Ultimate Chocolate Chip Cookie n’ Oreo
Fudge Brownie Bar
1 cup (2 sticks) butter, softened
1 cup granulated sugar
3/4 cup light brown sugar
2 large eggs
1 Tablespoon pure vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups (12 ounces) milk chocolate chips
1 pkg Double Stuffed Oreos
1 Family Size (9×13) Brownie mix
1/4 cup hot fudge topping

Preheat oven to 350 degrees F. Cream the butter and both sugars in a large bowl with an electric mixer on medium speed for 3-5 minutes. Add the eggs and vanilla and mix well to thoroughly combine.

In a separate bowl, whisk together the flour, baking soda and salt, then slowly incorporate into the mixer until the flour is just combined. Stir in chocolate chips.

Spread the cookie dough in the bottom of a 9×13 baking dish that’s been lined with wax paper and sprayed with cooking spray. Top with a layer of Oreos.


When it's just you cooking, you can lick the bowl all by yourself.  It was nice!

Mix together brownie mix, adding an optional 1/4 cup of hot fudge topping to the mix (I did not do this step). Pour the brownie batter over the cookie dough and Oreos. Bake at 350 degrees F for 45-55 minutes.

Crockpot Chicken Lettuce Wrap

I have a new best friend and her name is "CP", short for crockpot.  We have been doing alot of activities together and some more than once because it's so fun!

One of the things we can't do together is go out to eat, so....I bring the recipes to her and we try'em out.  I love me some chinese food and really like P.F. Chang but maybe go once a year if I'm lucky.

They have alot of tummy yummy's but something they are known for are their "Lettuce wraps".  I came across a recipe...wait, not just any recipe but a crockpot recipe for making these tummy fav's.  Stephanie @ A year of slow cooking [click for original recipe]is one of my new blog friends (well not new anymore, I've known her for a year now) but she doesn't know but we are like this...X.

I've made this recipe twice and would do it more but don't want to burn myself out.

Crockpot Chicken Lettuce Wrap

What you need:

Not pictured: Lettuce and rice

10-15 Boneless skinless chicken tenderloins (I used frozen)
3 Tbsp of minced garlic
4 Tbsp of dried onion flakes (or 1/2 chopped onion)
1/4 Cup soy sauce
1/4 Cup white cooking wine
1/2 Tsp ginger
2 Tbsp balsamic vinegar
Dash of allspice

Directions:
  • Put chicken in crockpot topped with garlic and onion. 
  • In a mixing bowl, mix the liquid and spices.  Pour over chicken. 
  • Cover and cook on high for 6-8hrs.  I did stir a couple of times as chicken wanted to stick together.
  • Once done, you can chop chicken up inside crockpot or take out and chop, then put back in.
  • Serve over lettuce leaves.  I used a head of lettuce and chopped up but rumor has it that Trader Joe's sells them already separated (I haven't made it there yet).  I also added rice because they give you rice at PF Changs.


Enjoy, I sure did.  I would say it serves at least a family 4.

Gobble...Flobble

I have no crafting ability but I will try my hardest to teach the kids in my ASP different crafts.

We made turkeys today in honor of Thanksgiving.  I asked them today what was Thanksgiving.  I heard, a day where you eat lots of food, when you get presents and you are thankful for them, a day to eat turkey.  Oh kids, they just keep me laughing.

So this craft, I found on Pinterest at Our best bites.  You can get the full directions from their site.

So this is what I used.  I couldn't find candy corn today.  They must have already pulled them from the shelves.  I think they are seasonal.  Sometimes you can find the generic ones but couldn't find anything.  So I thought, we could use pretzels for the feathers but that didn't work and we used chocolate chips.



So I followed the directions step by step but crafting is not my field.  I want to be creative so bad that I try really hard.  My best crafting project is coloring and even then sometimes my kids ask why I color something a certain way. 

My little kids were the ones that crafted with me today, so they are pretty easy to satisfy and don't judge my crafting skills too much.  They were really patient and we all had a blast making our turkeys.


One of my kids and her finished project.  She was so proud of her turkey.  She did a great job.  Hers looked so much better than mine.  Mine looks a little cock-eyed.

I pray that one day, my crafting fingers come alive and the passion for craft becomes visable in the work I do.

The kids had so much fun they wanted to make them next week.  I wonder if it's because I let them eat some of the candy while we were making them.  Can't say no to the chocolate.

Crockpot Chicken Chili


For bible study, I always like to sign up to bring a dish for 1. It's means I have to come, no backing out and 2. I always like to find and try new recipes and they are my testers.

I use to make things for work but sometimes people start to take you for granted and something fun that I liked to do just because turned into a pain.  What do I mean?  Well I would make different dishes and everyone would like them and then start requesting items or asking why I didn't bring breakfast or lunch in because they were waiting.  Or people would want to know why I didn't provide drinks to go with the item and if I ask for someone to bring drinks, you thought I had asked for them to handmake it.  Then people would go on "diets" and be upset that you didn't make a specialized dish for them.  Hogwash!!  Yes, I should continue to do what I like to do and bless them but I will say, I have to do it on my on timing so I won't get caught up in my emotions of their actions.

It was chili month at bible study and I had signed up to bring "White Chicken Chili".  I have never made it nor had it so off to look for recipes.  After looking at all the recipes, I realized that I wasn't too fond of white beans.  I'm not too fond of beans in general but definitely not white beans.  Thanks to Chipotle, I really like black beans and came across a recipe using black beans.  Then to my surprise, I came across one for the....Crockpot!  Yes!!  So I was going to make white chicken chili w/black beans.  It didn't dawn on me to call it "Chicken Chili" until I mentioned to someone what I was making.  I know, I'm a little slow.  I've been having alot of those moments lately.

So I made this for the bible study and brought leftovers to work to eat.  One of my co-workers asked if she could have some (which I was thinking, it was just some that I had bought) and then another co-worker heard her ask and she asked if she could have some.  Always excited for people to try what I make I said sure.  They warmed it up and had some.  Then they asked if they could have it all because it was soo good.  Of course I said sure.  They've been asking for it all the time now.

Crockpot Chicken Chili

What you need:


Most important: 1 crockpot liner!
1 Bag of boneless skinless chicken breast tenderloins (used frozen)
1 Can of black beans (drained & rinsed)
1 Can of corn (drained)
1 Can of  rotel (I used mild, I'm a wuss)
1-10oz Sante Fe Blend Cooking Creme

Directions:
Put items in the crock in order of list. 


I put it on in the morning on low and after an 8 hour shift at work, Bam! It was done.  After stirring chii, it was perfect.  I did not shred or cut chicken.  They were already in perfect pieces.  If you turn it off and let it set for 30-45 mins, chili will thicken a little.

The recipe calls for you to put it over rice but you great with or without rice.

**A couple of suggestions:
I used Bush's Seasoned black beans which is alot better.
The recipe calls for 8oz of plain cream cheese.  I did try but it was NOT good.

Chocolate Wasted

So for the past week, I've been battling sinus'.  My doctor wouldn't give me anything so I've been doing what I can.  Last weekend was my first free weekend in a while, so I had planned on getting medicated and not leaving the house, well except for my hair appt on Saturday, until I got the text, "GNO my house" from my friend Pam.

Well I just couldn't turn down this invitation, if you don't know Pam, she is a wonderful friend, a Super-duper social worker, and a pretty fun chick, I would say myself.  Go check her page out.  She will have more details about our great evening.  Hey anyone that says I can come with my snot rags and all is A-O-K in my book.

She tells me that the night was a Pinterest inspired girl's night.  Everything that we were making from food to craft came from pinterest.  Game on!  If you haven't heard of pinterest before, it's very addicting.  More addicting than facebook in my opinion.  It's a virtual pin board. Thought I would lead with this video!

So I helped make the dinner which was Gnocchi Mac and Cheese.  I've never had Gnocchi before but I would give it two thumbs up.  Pictures were taken by my friend Pam and from her page.

We had some yummy veggies to go with it.

Then I helped make this great dessert...Chocolate Chip Oreo Fudge Brownie Bar.  Which was so simple, even for me.  It was chocolate chip cookie down, layered with oreo's and chocolate brownie mix. 
      
We totally got chocolate wasted on this wonderful dessert.  I tried so hard to eat all mine but I think I still had a few bites left.  When oreo's are cooked, it has a different texture that is Ooolala!

Megs said as we started eating, I hope no one is diabetic?! Of course, me, I'm taking pre-diabete pills does that count?!  I really am but nothing was going to stop me from trying this warm and chocolately dessert. 

You better believe that while I was at Pam's house.  My sinsus' had cleared up a little and I was not sneezing, nor had watery eyes, and best of all I could taste.

Our craft of the night were Chi-Chi gloves.  We were suppose to make bath fizzles but citric acid was pretty hard to find.  We had a great time making them.  I am pretty slow at crafts, so of course, I needed help with mine right off and I was paying attention. 


I can't wait for our next P.I.G's Night (Pinterest Inspired Girls Night).  I am currently working on the craft that I would like to present when it's my turn to host.  I need that much time to practice. 

Overall it was a great time to be had by all of us.  I stayed the night.  I had just a chocolate hang over that I went to my hair appt. and slept the whole time while she was doing my hair.  It was definitely a much needed time.

Living Life

So often, I feel like I'm just going through life.  Not really living it but just going through it.  There are moments that I live life and I enjoy it and sometimes think, why don't I do this all the time.

This month, I felt like I've been living life and wanted to share those moments.

 Fall brings FOOTBALL.  I love me some Sooner and Chief's football. I've attended two NFL games this year and enjoyed my experience at the Chiefs game.

I've always wanted to go to Weston, Missouri and I went this month with my church's single's group.  We had such great weather and the Irish fest was going on the same time, so it was extremely packed with people.  We had a lunch at the park which would be worth going back to again.

I went to the Maple Festival again in Baldwin, Kansas.  Lorie and I went last year for the first time and had a great time.  This year I invited Erica, Nemo and Lana to experience the festival and they loved it.  I was on a mission this year to bring back some Mango Salsa and to find the lady that sold casserole covers and get a OU one.  Get to the salsa table and they were out.  She did sale me their last sample jar which didn't have a label on it, so it was 50 cents cheaper.  The good news is that they have finally branched out to the Kansas City area in Overland Park, KS.  You better believe they will be no stranger to me.  Best mango salsa ever!!

The Hill's, a couple from church have been God sent.  They have been my Kansas City parents.  They invited me to Springfield, Mo to go visit their grandchildren.  I had such a good time.  Luci (4yrs), Calla (2yrs) and Seeley (2mths).  We took them to the pumpkin patch, played and they showed me how they can fit in the play kitchen stove and dishwasher, tried on their halloween costumes, and prepared for a bon fire event they were having.  Learned that pumpkins start out green.  I guess I really never thought about it until I saw the green ones and learned they turn orange.  I thought it was the neatest thing.  Also learned there is a difference between a mule, donkey, and burro.  I've just classified them all as donkey's but they are different.  You can always learn new things, keep your eyes and ears open.

While in Springfield, I went shooting.  I shot an AK47 and 357 mag.  I passed on the 44 mag as it seemed a little too powerful.  I was so scared to shoot the guns.  On tv, they make it seem like it's nothing but these equipments were so powerful and loud.  I was informed I have a long ways to go still in order to go hunting.  I shot from 25 feet away and I thought it was pretty challenging and still scary.  I hit the target but not the dot that I was aiming for.  I want to get more practice shooting and not be so scaried shooting them.  I'm going to need to find a partner who wouldn't mind taking classes with me. Humm, that may be challenging and I may have to take this one alone.

On our way home, we stopped in Osceola to sample some cheese.  This place is worth the hour and a half drive to go visit again.  They had tons of cheese and other things to try and a gift store with some really neat things.  We stopped and had chili cheese fries with my new pirate friend.  It wasn't happy that I had to leave him.

I've been meeting new people and getting out of the house on the weekends.  It's been nice.  I'm so used to going to work--coming home and eat--go to bed and do it all over again.  Then when the weekend comes, I just stay in bed ALL day. No joke.  I love it.  However, I also enjoying doing what I've been doing for the past two months.  Being around people, going to festivals, making memories and taking pictures.

I want to be and do what God has for my life.  I know He does not want me sleeping my life away.  That is not what I'm called to do or be but yet it makes me happy many times to do nothing.

Lord, thank you for the opportunity to be around people and to meet new people.  Thank you for letting me experience life and the good it has to offer.  I know this life is temporary and the things of this world will one day be gone.  I pray that I take advantage of the time you have given me in this world and not take for granted family, friends, and time.  I pray as I continue to see Your will for my life, that I use the wisdom you have given me to make the right choices.  Thank you for your Grace and Mercy.  Thank you for loving me just for me.  In Jesus Name, Amen.

The Joy's of Fall

I know it's technically summer still but fall is right around the corner which means...Fall Festivals.

This is the first time I've been to Chillicothe, Mo, home of the slice bread. I Learn something new on every trip.  They host the Chautaqua fall festival every year and a good friend of mine invited me to go and you better believe I was in that car. 

There are many reasons why I like fall festivals.  I think the number one reason is the yummy FOOD!
Cake pop, pork skins, blueberry cobbler cheese and walking taco's Oh My!  I've been hearing about all the different types of food that are at festivals and fairs lately and I was geared up to try the fried twinkie but this year they decided not to come.  Of course but that's okay, there were many other temptations.
No fried twinkie...that's okay, I tried the homemade Root Beer and it was so good.  The prices were based on the bottle and there were many to pick from.  You could walk around and drink your root beer and for a small fee come back and get a refill.  How cleaver is that.

I admire those crafters who keep those traditional way of crafting alive.  There were many women out there with their wheels and turning Ilama hair into yarn so they can knit with.  Some were making scarves, hats and many more items.  Something new I learned was that Ilama hair is the new knitting yarn.  I wonder why?

There was a lady demonstrating pottery making which I was really amused, it reminded me of "Ghost".  I want to hopefully make pottery on a wheel.  I was so happy being in the midst of such crafters.

I told you I like the food.  We were walking along and this booth caught my eye.  The sight of the pig skins made me completely forget I was walking with my friends and got engrossed in how pork rinds were made.  The pork rinds start out like the first picture.  Once you put them in hot oil, they expand into alot of good ole pork rinds.  I purchased the bbq flavor.  But I will tell you, they taste a little different now since I've seen the behind the scene making.  I still have a almost full bag.

There were so many creative stands and crafts and I could have stayed out there forever.  In the midst of all the stands and crafters, there were plenty of people to watch.  Something that made me laugh out loud was this lady pushing her dog in the stroller while her and the child pushed along.  This dog was no light weight.  Man, that dog has the life.

The rain held out until it we were walking back to the car.  We got completely drenched.  On the way back to my house, this was my view.  Thank you Lord for a great day and fall festivals.

Re-Kindle Love

For my crockpot.  Or should I say crockpotssss!


I have even a smaller one not pictured, it's at work.  Made chocolate fondue in it for the kids at work!
I've always enjoyed my crockpot but finding recipes or should I say realistic simple recipes have been a challenge.  Well, within the last month, there have been some great websites surfacing on the internet via facebook and blogs. 
On top of this wonder, I've been exposed to crockpot liners savers, smile.  I bought my first box last weekend.  I will say, only 4 bags come in a box, REALLY!  You can't put a number on love, so let's put a little bit more bags in that box please Reynolds, (click on link for a $1 off coupon) please and thank you!

So I used my first crockpot liner Monday for a new recipe called Crockpot Brown Sugar Chicken aka Candy Chicken.  Stephanie @ A year of slow cooking has some really great recipes.  I think I found her site way of fb.

Candy Chicken
Ingredients

Look at me being all domestic, had my laptop ready with the recipe pulled up!
  • 12 boneless, skinless chicken thighs or 6 boneless skinless breast halves (I used 1 boneless chicken breast and 4 boneless chicken breast halves)
  • 1 cup brown sugar
  • 1/4 cup lemon-lime soda
  • 2/3 cup vinegar (I used white wine vinegar)
  • 3 cloves smashed and chopped garlic (I used 3T minced garlic, that what I had on hand)
  • 2T soy sauce
  • 1 tsp ground black pepper

Directions
Use a 4 quart crockpot for this recipe.  (I don't know what size mine is but it worked great-see my baby)


Happily lay your chicken in your crockpot.  Cover with the brown sugar, pepper, chopped garlic and soy sauce.  Add the vinegar and soda.

Cover and Cook on low for 6-9 hours or high 4-5hrs.  Now, let that babe rock your world! 

Serve over a bowl of white rice with a ladle full of the broth.

I made for my neighbor too and she loved it.  She said it tasted like chinese food.  Which it did.  It tasted like sweet and sour chicken.  The next time I would probably add less vinegar and brown sugar.  I would probably add some vegetables in the mix.  It would be good with fried rice.  I need to find a simple recipe for that.

Overall, I would make it again.

I got this picture from a fb friend.  I believe this encouragement came from the book and film 'The Secret'.  I haven't read the book or movie so I cannot promote it but I really like this creed/encouragment.

The only thing I would change of this creed is the last sentence to read...

"To live in the faith that God the creator of this world is on my side, ..."


Print this off, retype it and hang it up.  Encourage yourself daily and stir up the God within you.

A Light in the Dark Places

"Let your light shine before men, that they may see your good deeds and praise your Father in heaven."  Matt 5:16

Where did that saying come from...They cuss like a salior?  Do all sailors curse, probably not No but they all have that stigma.  We now use this term for people with potty mouths.

"We all stumble in many ways.   If anyone is never at fault in what he says, he is a perfect man, able to keep his whole body in check." James 3:2

Confession: I'm not perfect--I know, I know shocker huh!

Seriously though, I do have a testimony and want to give God the praise because it was ALL Him.

I'm the new person in an office of two people of which one is part-time.  One of my co-worker's who I have to work closely with so I can provide services has a mouth out of this world.  A little soap treatment is definitely needed.
Now, cussing is not my weakness but I believe if you hear it often enough and dwell on it like anything else, it can get in your spirit and the enemy can take root. 

Now this co-worker has been there for over 9 years and here I come wanting her to change her language.  I would say things to her and ask her to please watch her mouth.  She would apologize but continue to use "hard core" curse words.  When she would say 'gd', I would always say something but reminder her about her words is a full-time job in itself. 



Her language was bothering me so much that when I wake up in the morning, I would have thoughts of curse words in my head.  It's so important to not only guard your heart but your ears.  Now I can corrupt myself, I don't need anyone to help me in that process.  I knew when I would wake up and that was occuring that it had become serious.

I didn't know what else to do and I didn't want to go over her head because that would just make the situation worse.  So God would definitely get a ear full.  I'm so glad that he can handle my venting sessions, problems and everything else I bring to him. 

Talking with some people from church, they really tried to convince me that I need to go over her head. That I should not have to work in an environment like that.  I know there are laws in place but sometimes it really is best to try and resolve in on the same playing field.  So they suggested that I get some instrumental christian cd's and play it in my office.  They even gave me a couple and to talk to my co-worker again but be more firm.

You would think as a social worker, this would be easy for me because I advocate for people everyday.  Well when it comes to myself, it's so much harder.  That assertiveness goes right out the door sometimes.   


So last Monday, I came into the office and played my cd's and thought to myself, what am I going to say, when will be a good time, how am I going to say it...My nervous were getting the best of me.  So my co-worker comes into my office and starts talking about how I'm such a good person and that I need kids because I would be a good mother and so much love to give and so on...Her demeanor was so different and I knew something was going on with her.  Later I go into her office because she needed help with something.  The she goes into out of nowhere that she doesn't cuss in front of her kids and I threw in there that I would appreciate it if you didn't cuss in front of me either.  She goes on to say that she knows she needs to watch her language and that she is a bad person and on and on...No, you are not a bad person I console her and we talk a little and back into my office I go.

Wow God!!  He just worked that situation out.  He changed her demeanor that day so she would be responsive to what needed to be done, he had her start the conversation, and he changed the atmosphere in the office.

We know God doesn't do anything little, right!  Well later on that day, it was just me and the part-time person in the office.  She yells from up front and ask what church I go to.  As I'm thinking to myself, What?  She comes back to my office and states that she needs to find a church to start going to...

Again, Wow God!  You are awesome.  Thank you for opening up doors and moving when I am weak.  There are so many times when I get tired of being the only light.  But this situation was a sign to show me that I am where I am suppose to be.  God said we must not get tired in doing good for we will see our reward if we stay steadfast.
